Haster - mango chutney

MANGO CHUTNEY

2 Cups Red Onion -- diced
1/2 Cup Cider Vinegar
3/4 Pound Light Brown Sugar

2 Cups Apple -- diced
2 Cups Pear -- diced
1 Teaspoon Curry Powder

1 Cup Mango -- diced

INSTRUCTIONS
Place red onion, vinegar and brown sugar in a stainless pot and bring to a simmer.
Cook for about 30 minutes.

Add diced apples, pears and curry powder and cook for a further 20 minutes (or until syrupy).

Remove from heat and add Mango.

NOTES: Be sure that all fruit is ripe.

MANGO CHUTNEY CUBANO

Makes about 1 1/4 cups.

1 fresh mango, seed removed, peeled and chopped (about 1 cup)
1/4 cup peach preserves
1/4 cup finely chopped red onion
2 tablespoons fresh lime juice
1 teaspoon chopped Serrano chile pepper, seeds removed
1 teaspoon chopped fresh mint

Cooking Directions
In medium microwave-safe bowl, stir together all ingredients, except mint.
Microwave on HIGH (100%) for 5 to 6 minutes or until most of the liquid has evaporated.
Stir in mint.
Serve warm or chilled with fully-cooked ham.
Can be made ahead and refrigerated for 1 week.

Serving Suggestions
Mangos are a great foil to the smoky flavor of ham. This chutney has a kick from the Serrano chile pepper and some sweet from the preserves that evens out nicely.
