Det er blomkål ,spinat ,squash.For et år siden ble jeg vegetarianer :D

Paprika. Bakt, stekt, rå, salsa.
Brokkoli. Stekt i panne.
Blomkål. Suppe eller kokt.
Løk. Rødløk, gul løk.
Salat. Spesielt feldtsalat og andre litt mørke leaves.
Purre og vårløk.

i made butternut squash soup last night.. a few cups of BS , boil in enough water to cover it in the pot but not much more, once its boiled for awhile and soft then put it in a blender with lots of butter and cinnamon extract.. salt and garlic optional

Boil cauliflower and then mash it with a potato masher or hand blender for riced cauliflower or puree like mashed potatoes .. also if you eat dairy I have an excellent mockaroni & cheese recipe with cauli

Stir fry zucchini and yellow squash with onions, garlic, mushrooms and lower herbs.

Roasted cauliflower with garlic and olive oil, roasted or sauteed Brussels sprouts with bacon, cranberries and balsamic vinegar, cauli "fried rice" or mashed cauli, broccoli with garlic butter and pumpkin seeds, baked acorn squash with a little brown sugar and maple syrup.

Stir fry pay choy with strips of courgette, asparagus, ginger spring onion & garlic

Stir fry cabbage and broccoli with ghee

I've been eating purple cabbage lately very tasty in salads with pumpkin seeds

Sautéed zucchini coins with a squeeze of lime juice and a little grated Parmesan cheese

diced cabbage mixed with olive oil, lemon, and curcumin, then baked. baked dino kale chips are also tasty combined with poached eggs. I have all 3 for lunch most days.

Roasted butternut squash and Brussels sprouts.

I make everything into a curry base, or indian style dry, with onions, tomatoes, ginger, garlic and indian spices! Lol!

I sautéed a chopped onion and garlic with olive oil, when translucent I add chopped eggplant, chopped red peppers and frozen artichoke hearts and cover with tomato sauce or just chopped tomatoes with some spices(oregano, thyme) add water as needed and cook until eggplants are soft.

Oven roasted veggies( salt and olive oil) carrots, peppers tomatoes, onions,rutabaga ,cauliflower ,broccoli, beets,or any other or combo you tolerate. I also like to stir fry onions, then add garlic,cauliflower rice, shredded carrots, peas, herbs, salt, peppers. Spaghetti squash with tomato sauce and ground meat. thinly sliced squash rounds that take the place of pizza crust and topped with pizza type toppings. Spiralized veggies with sauce of choice.

Green beans sautéed with garlic and coconut oil/butter. Cauliflower steamed then add coconut cream, crisp bacon and a bit of cheese.. Bake @375 till melted. Brussel sprouts 1/2'd , onion, garlic and bacon pieces a bit of avocado oil ( or which ever you like) salt and bake at 400 til done

I agree, roasted veggies are the best! Our favorites are eggplant, zucchini, and cauliflower. And spiralized zucchini makes a great "alfredo!"

i just made zucchini carrot pancakes: shred zucchini, salt and let drain. squeeze out excess moisture (i let it sit for at least ten minutes first). shred carrots. i use legal onion powder, but if you don't have it, fry up some onions and add to the mix. mix in enough egg to coat the veggies, fry in patties. serve with applesauce.

Broccoli or cauliflower I steam the put real butter salt and pepper, butternut squash bake it then add skat pepper and butter or do something sweet with it salt honey and cinnamon or coconut flower, green beans again steam, pumpkin again sweet or savory,
